Anhydrous Milk Fat results from the removal of the moisture and milk solids-non-fat from pasteurized cream. This product has a smooth and waxy texture, a uniform light golden color, and a bland, uncultured, unsalted flavor that is free from foreign or rancid flavors. Anhydrous Milk Fat consists of a maximum of 0.20% moisture, 99.8% milk fat, a 0.20 MEQ peroxide value, and 0.3% free fatty acids. The peroxide value will increase if the product is stored at temperatures of 60°F or higher, or if it is exposed to light.
